What Is The Best Kind Of Cutting Board To Buy?
I have a plastic one, but I don’t like it… And I like the look of the butcher blocks and wood but if you cut up meat on it doesn’t it absorb the germs and stuff into the wood? What about bamboo? Or glass? Anybody?
Every cutting board has its issues. Natural wood tends to be popular, but it’s difficult to clean and stains easily. Butcher blocks require annual sanding and sealing in order to decrease germ contamination and staining. I don’t know what the previous commenter is talking about with wood “trapping” germs so that they don’t get into food. That’s just not true. When you use wood to cut upon, your knifes will create little slices in the surface that will trap germs, but this is not a good thing! Contagions always germinate and they can spread all over the entire cutting board even after cleaning it thoroughly. You can’t use a bleach solution to kill the bacteria, because it is not safe to use around food. Bamboo cutting boards look pretty, but they are even worse than wood, because they will split after heavy use. Glass or marble cutting surfaces will do damage to your knives. Plastic varieties are inexpensive, but their quality varies. The cutting surface I like best is made out of a plastic polymer. It holds up well and you can disinfect it easily:

Plus, it looks pretty sleek.
Either way you go, you want to keep more than one cutting board on hand. I use one for cutting meat and one for cutting vegetables/fruits. Even though you can easily disinfect these boards, having one specific board that you always use for meat will decrease your chances of cross-contamination.
